Nothing beats watermelon in summer.
Its great as it is by itself, but really tastes awesome with tomatoes and a little lemon.
I created this summer salad, perfect for a picnic.
Its so refreshing.
Watermelon and tomato salad
Serves 4
1/4 watermelon
24 red and yellow cherry tomatoes, cut in half
4 cups watercress
4 tablespoons olive oil
1 tablespoon lemon juice
salt and pepper
Use a melon baller and make a bunch of watermelon balls.
Place them in a bowl with the tomatoes and watercress.
In a small bowl mix together olive oil, lemon juice, salt and pepper.
Pour the dressing over the salad, mix and serve.

I tried something very close to this only you used the tomatoes, watermelon sliced thin red onions with red wine vinegar and olive oil .
