Recipe Monday....

Let's face it, its monday.
And as we all know mondays can be kinda drab.
Ever since I woke up this morning I have had a feeling that its just one of those days where you need to have a cocktail for lunch, one for dinner and one after.
And after that might happen as well.
This is a cocktail I came up with for the spring issue of Sweet Paul Magazine.
Its fresh, sweet and has a little bite to it, just like a good cocktail should be.
The cucumber gives it that mild spring flavor.
Simple syrup is simply equal parts sugar and water boiled together.

Mint, Cucumber and Lime Crush
Serves 4

Juice of 3 limes
1 cup simple syrup
3/4 cup white rum
2 lime, thinly sliced
1/3 cucumber, thinly sliced
fresh mint leafs
ice
club soda

In a large pitcher or jar mix lime juice, simple syrup, rum, lime, cucumber, mint and ice.
Stir and serve in glasses topped off with club soda.

Crafty Friday....

I went to the huge Brimfield Flea Market last summer.
There I bough a big bag of old stamps for $40.00.
Have turned them into some cool projects and this is one of them.
You simply cut your stamps so they look like small flags.
Glue them to a string using paper glue.
I then glued the ends of the string to two lollipop sticks and placed them in a cupcake.
Kinda cute.

Recipe Monday....

This is a dish that came about when someone challenged me in making a tasty dish in 15 minutes or less.
I remember I came up with a tortilla pizza with prosciutto and pesto.
Its so easy and really does not take more then 15 minutes.
You start with a tortilla and cover it in one tablespoon of store bought pesto.
As 3-4 cherry tomatoes that you cut in half.
Bake at 400F until golden, takes less then 4 minutes.
Take out and top with prosciutto, basil and a little more pesto.
Its so good......

Crafty Friday

This is a great fast little weekend craft project.
These cute bracelets are the perfect friendship gifts.
You will need some pretty velvet ribbons, buckles and fabric glue.
Start by placing the buckle on the ribbon and glue it in place.
Then measure how long you want the bracelet and cut.
Ready to use.

Mobile Giveaway from Smallable

Recipe Monday....

Lemon and almond Tart
The crust here is divine. Its almondy and sweet and perfect with the sour lemon curd.
Serves 8

1 cup almond meal
1 1/2 cups plain flour
1/3 cup sugar
1 1/4 sticks salted butter, cold in pieces
1 egg
2 teaspoons grated lemon zest
5 large egg yolks
3/4 cup sugar
1 tablespoon grated lemon zest
1/2 cup lemon juice
3/4 stick salted butter. cold, in pieces
Candies lemon, optional

Place almond meal, flour and sugar in a bowl, mix.
Add the butter and work it into the flower with your fingers.
The result should be grainy.
Add egg and lemon zest and fast work the doughy together.
If it seems dry, just add a few tablespoons iced water.
Wrap in plastic and let it rest in the fridge for at least 1 hour.
Take it out and roll it out to a thin crust.
Place in a greased pie tin.
Use a fork to prick the bottom with.
Bake at 375F for about 15 minutes or until golden.
Cool on a wire rack.
Beat egg yolks and sugar to thick and creamy.
Place over a water bath and add zest, lemon juice and butter.
Beat until it becomes thick and creamy.
Pour into the pie crust and cool until serving.
Decorate with candied lemons.
