I love beans, I really do.
I usually use dry beans and soak them overnight, but from time to time I have to use canned ones.
They are fine, nothing wrong with them, except one thing.
BEAN-JUICE.
I can't stand that liquid that the beans are soaked with.
Its almost to the point that someone else have to open the can for me and rinse then.
Whoever have heard of a food stylist afraid of bean juice?
Oh well, once your beans are drained and ready you can make this amazing spread that also can be served as a dip.
Its so good.

Bean mash Bruschetta
Makes 12
1 can cannelloni beans, drained and rinsed
1 garlic clove, finely chopped
4 tablespoons olive oil
salt
12 baguette slices, toasted
fresh thyme
a little chili flakes
olive oil
Place beans, garlic and oil in a blender and blend until smooth.
Season with salt.
Smear on the toasted baguette slices.
Top off with thyme, chili and a little olive oil

"Apples for Jam" is a great cookbook with a nice recipe that includes diced tomatoes and sage. I love these beans, but if I could hire someone to rinse them, I SO would. Hence, I stick to dry as much as I can.

perhaps "cannellIni" beans ? Cannelloni is a wonderful traditional italian food with egg- pasta,ragu' and besciamella-sauce for sunday lunch

I feel the same way about bean juice. It makes me gag a little. But I love beans so much that I can push past it.

I have a very similar recipe, only it calls for lightly cooking the garlic beforehand....a squeeze of lemon juice is optional

It's so funny that you said that because I totally agree. Bean juice is gross & weird. Definitely tickles the gag reflex. But - it's worth it for recipes like this :) Yum!!
