Its supposed to be fall now!
If you are in New York like me, you know that we still have around 80F, humid and summer.
But even if its still summer here, I'm starting slowly to crave fall flavors.
This is a great "going into fall" dish.
Simple, easy and have those fall flavors you want.
Start by cutting up 1/2 LBS mushrooms and finely chop 1 onion and 2 garlic cloves.
Heat up a pan and saute mushrooms, onion and garlic in 2 tablespoons olive oil until the mushroom starts to golden and the onion is soft.
Add 1/2 cup chicken stock, 1 1/2 cup cream and 2 tablespoons chopped fresh dill.
Let it simmer for 5 minutes and season with salt and pepper.
Cook up enough pasta for 4 people, remember to ad salt to the water.Boil until al dente.
Strain and place in a bowl. Add the sauce, mix and serve with shaved parmesan on top.

Hi Paul! I discovered your blog about a few weeks ago & I just love it! I saw this recipe & thought 'Wow I must make it soon!' I've never been much of a cooker but I'm trying to now & I used this recipe last night.
Can I just say.. AMAZING! This was my first time buying/cooking mushrooms & I substituted cream with milk/butter/flour so my sauce is a little on the soupy side but overall, it tastes great.

Just cooked this up and it was delicious! So simple and SO prefect for a blustery fall evening. I will be making this again and I might try fresh thyme next time (only because it is fresh in my kitchen window...).

Very delicious! I used a little less cream and a little more chicken stock, to cut down on the fat and it was still delicious. My whole family loved it. Even my husband who doesn't love mushrooms.

I make a very similar recipe, but I make sure to caramelize the mushrooms first (low heat for a long time without stirring, just occasionally turning them, until they brown and the liquid is all cooked out) so they aren't mushy or rubbery. My fiance has NEVER liked mushrooms, but he loves when I make this! I also use marjoram, not dill, and I add a splash of port wine with the cream (and I use a little sour cream too). To die for!
And for everyone asking "what's the cream?" Um... it's... cream. You know... cream?

Made this tonight for dinner and it was really yummy!! I used parsley and a splash of lemon instead of dill and added some sun dried tomatoes (in oil) and a little flour to thicken it up. It was delicious! Thank you :)
