Recipe Monday

Im not the biggest fan of tomato sauces.
I find them very often heavy and to sweet.
And when they come with those huge meatballs on top......not my thing.
Don't get me wrong, I love italian food, but there is just something about tomato sauces that I don't find that appetizing.
So my take on the tomato sauce is quite simple.
I heat up small tomatoes in the owen until they crack, mix them with freshly cooked pasta and ad herbs and parmesan.
The dish is light, tasty and very easy to make.
Enjoy!

Serves 4

30 small tomatoes, type mini plum or cherry
4 tablespoons olive oil
1 pound freshly cooked pasta
1 bunch fresh basil, just the leafs
olive oil
1 cup freshly grated parmesan

Place the tomatoes in an oven proof dish and drizzle with olive oil.
Bake at 380F until the start to crack.
Place the freshly cooked pasta in a bowl, add tomatoes, basil, olive oil and parmesan.
Mix and serve.

The cover was shot by my proud to say friend Frances Janisch and the cake is inspired by a cake my mom always would make every summer.

Recipe Monday

I don't know about you, but i'm so craving simple italian food these days.
Its something about italian, when made right, that is so amazingly tasty.
You just need really good ingredients.
This is my favorite "go to" snack.
Little skewers with marinated mozzarella, cherry tomatoes and off course basil.
Its like the perfect bite.

Cupcakes, the book!

My new cookbook "Cupcakes" are out!
Only in Norway for now, hopefully it should be out in English soon. I will keep you posted.
Its filled to the rim with great recipes, fun decor tips and just everything you need to know about cupcakes.
It was such a fun project to work on, the photographer was the ever lovely and my friend Frances Janisch and we shot the whole book in my little apartment in Brooklyn.
Its out on Versal Forlag and in stores now!

Crafty Friday

One of the stories that was the most fun to make in the Kid's issue of Sweet Paul Magazine was the cardboard box story.
I love turning something as plain as a cardboard box into something fun.
This house takes a while to make, but the result is just so cool.
Have a fab weekend all...

You will need:
One large box, ours was 24 x 18 x 18
Box cutter
Hot glue gun
Water-based paint
Fabric scraps for curtains

Stand box upright and start by cutting off the bottom flap using a box cutter.
Open the top flaps, trace a triangle on both side flaps; using a box cutter, cut off the excess so there is a triangle roof corner.
Hot glue the triangle flaps to the large flaps. (A good tip is to secure it with a little tape.)
Take the two long bottom flaps and hot glue them to the roof, so that you have a complete roof.
The chimney is a 6- by 18-inch piece of cardboard folded into a square tube and hot glued together.
Make two triangle cuts on opposite sides of the chimney and hot glue in place.
Cut out windows and door using a box cutter.
Paint the house.
The curtains are just small pieces of scrap fabric hot glued in place.
Ready for moving in.
(The grass and flowers are made of cardboard as well.)

Recipe Monday

This image is from a Tapas cookbook Im writing and shooting with my pal Frances Janisch.
I not supposed to share this yet, but this recipe is so amazing that I simply could not wait.
Its really easy as well.
Buy 7-8 baby artichokes and cut them as thinly as you can. A mandolin is a great tool for this.
Place them in ice cold water with a couple of lemon slices in it.
Heat vegetable oil in a pan and deep fry the artichokes in batches.
Remember to patt them dry first with some paper.
Sprinkle with flaky sea salt and serve with aioli.
Its just so good.....
