"My Happy Dish" recipe contest!

Its time again for a new "My Happy Dish" recipe contest.
This time we are looking for a dish that made you happy as a kid.
Its for our Spring 2011 Issue, a kid's special.

The rules are simple.
*Send in your original recipe, that means it can not be a recipe to take from a website, cookbook etc, it needs to be 100% yours.
* Send us a text that starts with, this dish made me happy as a kid because,.......
No more then 10 lines.
* A hi-res portrait of yourself
*Deadline january 10th

Was Amy Jurist with her dads potato pancakes.
They are everything you want a potato pancake to be, crispy on the outside and tender on the inside.
She supplied us as well with some great hints on how to get the perfect pancake.

Last minute centerpiece

Its Thanksgiving and you forgot about the flowers for the table.
No need to start crying, why not use some of the produce you have in your fridge?
Here I placed some beautiful sweet potatoes from the farmers market in my favorite MUD bowl.
I think its really pretty and beats most badly arranged flower centerpieces.

Stuff it baby!

Its stuffing time.
Mine is made with olive bread, mushrooms and thyme.
The olive bread gives it an extra kick with the salty black olives.
And its the perfect match with the sweet mushrooms.

Dear friends.
You guys have raised $1200 until today.
Its 22 days left to reach the goal of $10.000.
The reason why I have the Kickstarter is that Sweet Paul Magazine is a personal founded magazine.
It all comes out of my pocket.
Im not complaining, its a truly labor of love, something I hope you dear friends can see from the magazine.

Hot chocolate

I have just been out for a walk and came home a little cold.
May have something to do with me not putting on a jacket, only wearing a very thin but stylish wool cardigan?
You never know.
Anyhow, Im now making hot chocolate and I want to share the same recipe with you.
Its easy and simple the best hot chocolate ever!

Best Hot Chocolate Ever!

Makes children of all ages very happy.

Makes 1 glass

1 1/4 cup full fat milk
2 ounces good quality dark chocolate
1 teaspoon sugar, or more to taste
Whipped cream to serve

Heat the milk in a saucepan over medium heat.
Melt the chocolate in the milk.
Add the sugar and whisk until dissolved.
Serve with whipped cream.

Mash with a crunch.

Those of you that watch Top Chef knows its all about the textures and taste profile.
(Hate that word)
So I was thinking, how can you get some more texture into your mashed potatoes?
And then it hit me, crispy parmesan flakes.
Not only do they taste great they also ads a really cool texture to the mash.
