Today is a hot day in New York.
98F, thats 36C, thats hot folks.
The only thing I want to eat when its this hot is fruits and berries.
And drink lots of water off course.
This is a very simple but tasty fruit salad with ginger syrup.
It really cools you down a bit.
Stay cool!
Watermelon and strawberry salad with ginger syrup
Serves 4
1/2 cup sugar
1 cup water
1 2inch peeled piece of fresh ginger
1/4 watermelon, in cubes
3 cups strawberries, hulled and halved
fresh mint
Start with the syrup.
Bring sugar, water and ginger to a boil in a small saucepan.
Let it simmer for 5 minutes, cool.
Discard the ginger.
Place watermelon, strawberries and fresh mint in a large bowl and ad the syrup, mix well, cool and serve.
Enjoy!

when the weather is warm, all i want to do is eat ice cream. fruit salad is much healthier of course. i love that you added mint for a nice coolness.

Water melon is one of the best fruit to eat this summer because it contains almost 100% water...
