Before I moved to New York I had never heard of a Popover.
The first time I had them was in a cafe on the upper west side called.....popover.
They served them fresh out of the oven with strawberry butter.
I have made them many times since, its the perfect breakfast or brunch treat.
Super easy to make and so good.
Popovers with Strawberry Butter
It’s so much fun peek in the oven and watch these rise. (Remember to serve them hot!)
Makes 6
Butter, for greasing 6-cup popover tin (You can also use a muffin tin.)
1 1/2 cups flour
1 1/2 cup milk
1 1/2 teaspoon salt
3 large eggs
Preheat oven to 425ºF.
Grease popover tin.
In a medium bowl, stir together flour, milk and salt.
Add eggs, one at a time to combine. (The batter can be a little lumpy.)
Pour _ cup of batter into greased popover tin.
Bake for 20 minutes.
Reduce heat to 350ºF and continue baking for another 20 minutes.
Remove from pan and serve.
Strawberry Butter
This butter tastes amazing with anything freshly baked.
Makes about 2 cups
1 cup salted butter
1/4 cup confectioners’ sugar
1/2 cup chopped strawberries
Using an electric mixer, beat butter and sugar until creamy.
Add strawberries and beat until mixed.
Refrigerate until serving.





















The strawberry butter sounds delicious! And I love popovers, but it is also fun to use the same recipe in a 9x13 pan and make a gigantic volcano pancake! ;D

Yum! This is further proof I need a popover pan. The butter looks great too - I wonder how well it would freeze. It would be nice to make and save for when it's not strawberry season.

That is the way they serve them at the Mariposa at Neiman Marcus. When my daughter and I do girls day out we always go there for lunch just for the Popovers with strawberry butter. We are going next month for her 21st birthday

Since I'm from Sweden I've never heard of or tried these, but they look delicious. Can I use a regular muffin tin? I can't imagine I can buy a popover tin in Sweden...

Had lunch years ago at Popover's. Not only wonderful popovers, but fabulous chicken tortilla soup. I asked if they'd share the recipe and out came a very spattered card with just the list of ingredients. I have gotten it down pat and have enjoyed it ever since.
