It's easter week, so here you have some fun easter ideas for you from a story I did for Country Living a year ago.

Recipe monday

Sweet Paul is back!
I want to say THANK YOU to everyone that left all the sweet comments for me. It really helped me in a very difficult time in my life.
So again, Thank you.
This monday Im giving you something that is like life itself, a little sweet and a little sour.
A lime pie.
I love the sour and sweet taste of this pie, its kinda an explosion in your mouth.
And if you serve it a la mode or with a dash of creme fraiche, its even better.

Lime pie
Serves 8
Crust:
1 1/4 cups plain flour
1 tablespoon sugar
1 stick cold butter cut into pieces
2 tablespoons ice cold water

Filling:
1 can sweetened condensed milk
4 egg yolks
1/2 cup lime juice
1 tablespoon rind

For the crust:
Preheat oven to 325 degrees F.
In a medium-sized bowl, mix flour and sugar; slowly work butter into the flour to create a grainy-like mixture.
Add water and continue kneading the dough to mix.
Wrap in plastic and refrigerate for at least 1 hour.
Roll out on a floured surface and place in a buttered pie tin.
Bake for 10 minutes.
Let cool.

For the filling:
Mix together condensed milk, egg yolks, lime juice and rind.
Pour into the pie crust and bake for another 15 minutes or until set.
Cool and serve.

Recipe monday

Sorry guys, no funny stories or anything.
Im going threw a really bad time in my life so I will just leave you with todays recipe.
Hopefully I will be back stronger soon.

Lemon and Thyme Roast Chicken
Serves 4

This is perfect for a Sunday lunch. It’s easy to make, and everything is conveniently in one tray. Can’t beat that!

1 large organic chicken
2 tablespoons olive oil
Salt and pepper
1 small bunch of fresh thyme
8 thin slices of lemon
2 pound fingerling potatoes
6 bay leaves
1 head of garlic, the top cut off
Juice of 1 lemon
1/4 cup olive oil

Preheat oven to 350 degrees F.
Rub the chicken with olive oil, salt and pepper.
Place the thyme and lemon slices on top of the chicken, using string to secure in place.
Place in a large oven-proof dish and bake for about 45 minutes.
Mix fingerling potatoes with bay leaf, garlic, lemon juice and olive oil and place around the chicken.
Roast for another 50 to 60 minutes.

Let the chicken rest for about 10 minutes before carving.
Serve with a green salad.

Crafty friday!

Ok guys, Im the first to say that todays craft is not the most practical one I ever came up with.
But then again, we can't all be slaves to practicality.
This necklace will not last forever, but long enough to make you the talking point of the party
What you’ll need:
4x12 inches of grosgrain ribbon
1 hot glue gun
10 stephanotis flowers
3 gloriosa flowers

Start by tying the ribbons together.
Then hot glue the flowers to the ribbon.
Wear it with pride.

Recipe monday

This recipe combines my two favorite ingredients. Eggs and cheese.
Ever since I was a kid I have loved that combination.

Three-cheese Frittatas
Kids love these—maybe because it’s such a treat for them to have their very own little omelets. (I am also a huge fan, so I guess you can call me a big kid, too!)

Makes 8

8 eggs
6 tablespoons heavy cream
1/3 cup ricotta cheese
2 tablespoon grated Parmesan cheese
2 tablespoons grated Jarlsberg cheese
1/2 teaspoon salt
1/4 teaspoon pepper
8 small oregano sprigs

Preheat oven to 350ºF.
Cut 3”x 3” squares of parchment paper and press into a muffin tin.
Mix eggs, cream, ricotta, Parmesan, Jarlsberg, salt and pepper.
Fill each paper cup 3/4 full.
Add oregano.
Bake for about 10 to 12 minutes, or until golden and set.
Serve warm or cold.

Crafty friday!

I made these vases for Country Living a while ago. They are made with cotton yarn in 4 different colors.
You need:
Bottles or vases
cotton yarn, not to thin
hot glue gun

Start by gluing the yarn on the bottom of the bottle or vase.
Do just a little at a time. It takes time, but the result is really beautiful.
Use different colored yarns to make the stripes.
Have a fab weekend.

My friend Jean over at See Pretty has designed this cool t shirt.
All money raised from the sales will go directly to Haiti relief efforts through the Foundation for Peace.
I just want to say that I think its so great when people do things like this.
