I remember the first time I was in Italy and tasted this dish.
I stayed at this amazing hotel in Firenze and the maid came in with breakfast in the morning.
She set the table by the window so that I could look at the view while I had my breakfast.
On the table was all kinds of italian goodies, including a bowl of something that looked like burned ricotta.
I tasted it and it was a wonderful mix of ricotta and honey.
By baking it they made the crust a little burned and the flavors mixed so well together.
I make it whenever I feel like a little memory trip to italy.
Honey baked ricotta
This is the perfect breakfast for me.
Ricotta, bread, honey and berries.
Serves 4
2 cups ricotta
2 tablespoons honey
toast, to serve
berries, to serve
extra honey, to serve
Stir together ricotta and honey in a bowl.
Fill the ricotta into 4 small oven proof bowls.
Place them under the grill in the oven until it just starts to get a little color.
Take it out and serve with toast, berries and some extra honey.
Enjoy!

This comment is about the choc cake you posted a while back. I made it when I was feeling down a few nights ago, and I must say ..it is the best choc cake/brownie I have tried. It was all happily consumed in 2 min..haha..

Mmmmm! I just happen to have a container of ricotta in my frig and I'm going to make this later today! Who says it has to be breakfast food, haha! I LOVE Italy and found that real Italian food is nothing like the Italian food over here. It's so simple and not everything is doused in red tomato sauce. Thanks for this recipe!
