The holidays are over and I must say that I'm so ready to get back to work.
Its still winter outside and this winter as every other winter I crave one thing more then anything.
Honey.
I think it must be from my childhood when my grandmother gave me hot milk with honey.
She always did that at wintertime to keep the flue and cold away.
And it kinda works, knock on wood. No flue or cold yet this winter.
A great way to use honey is this pizza.
I just love the mix of the sour chevre and the sweet honey.
And try to add some honey to your pizza dough, it turns out crispy and golden.
Pizza with honey and chevre
Serves 4
1 cup lunk warm water
1 tablespoon honey
1 tablespoon dry yeast
2,5 cups flour
1 teaspoon salt
4 tablespoon olive oil
Filling:
10 grape tomatoes, halved
1/2 cup crumbled chevre
10 basil leafs
honey to drizzle
Start with the dough.
In a bowl mix water, honey and yeast.
Leave it for 5 minutes so that the yeast starts to work.
Add flour, salt and oil.
Work the dough well together.
Cover with plastic and let it rise for 1 hour.
On a baking tray press the dough out with your fingers to form a large pizza.
Add tomatoes and half of the chevre.
Bake at 450F, 250C for about 5-6 minutes, or until golden and crisp.
Take it out and add the rest of the chevre, basil and drizzle with honey.
Enjoy!

Just beautiful! I love the combination of creamy cheese and sweet honey. I'll make this combination on crackers or just the honey and cheese on its own!

Caro Paul,
Missed out a lot lately. Happy to open your posts again. Need a spoon of your enthusiasm - regularly! Hope your New Year will be the best ever!
One thing I learned during my Italian life... there is honey and there is honey, and I have become picky. The most savoury honey comes from the mountainnous parts - directly from the farms/small scale! Bacione, Ingrid in Umbria
