You can never go wrong with pasta.
And the amazing thing is that when it comes to pasta, simple is the best.
I mean, a few good ingredients and you are there.
I really hate how they serve pasta here in NYC.
Its always with a tom of tomato sauce, its just to heavy.
Pasta should have few but amazing ingredients, like my spring onion and chili pasta.
How do you like your pasta?
Spring onion and chili pasta
Such an easy dish to make.
So much flavor.
Try making your own breadcrumbs, it will taste so much better.
Serves 4
3 tablespoons olive oil + extra for serving
4 spring onions, chopped
2 teaspoons red pepper flakes
1/4 teaspoon salt
3 tablespoons dry breadcrumbs, tossed golden in a non stick pan.
2 tablespoons parmesan, freshly grated
1 pound dry linguine
Heat oil in a pan and add spring onions.
Saute until tender, about 3 minutes.
Add pepper flakes and salt.
Cook pasta al dente in salted water.
Drain pasta and add to pan.
Toss gently.
Divide pasta between 4 plates.
Drizzle with olive oil and sprinkle with breadcrumbs and parmesan.
Enjoy!

Mmm, the sauce is my most favorite part of eating pasta... especially when it's fresh and real full of flavor! Sometimes pasta with a mild salsa is good too. (Maybe that is an acquired taste for most people?)

Det så veldig godt ut! Tror det blir pasta til middag i dag! Min favoritt pasta er med stekt chorizo, ruccola, parmesan og mozzarella! Men, også med stekte cherrytomater, basilikum og parmesan. Mmmm... nå fikk jeg lyst på pasta til frokost :D ha en strålende dag!

This pasta looks light and lovely. My pasta mood changes daily. Depends on the weather, I suppose. I keep it light and fresh when it's warm. As the temp dips, I opt for chunky homemade red sauce with hunks of crusty bread instead of noodles.
