Paul's summer pie
Serves 6
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups sugar
1 egg
1 teaspoon vanilla extract
4 eggs
4 tablespoons sugar
1 cup mascarpone
1.2 vanilla bean
2 cups mixed fresh berries
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll out the dough to a thin layer on a piece of wax paper.
Turn the paper upside down in a greased pie tin and drag of the paper slowly.
Trim the edges.
Bake 8 to 10 minutes in the preheated oven, or until golden. Cool on wire racks.
Separate the eggs.
Whisk the egg whites to soft peak.
Whisk eggs and sugar light and creamy.
Add mascarpone and mix well.
Add vanilla and egg whites and mix until its all blended.
Pour mixture into the pie crust.
Add the berries and serve.
Enjoy.

I just found you and your wonderful photos, styling and recipes.
Compared to you, I am a little old lady living in the boonies..a country bumpkin.
I drove over an hour today to buy some Gruyere cheese in order to make your Gruyere and red onion pie.
It is not as if I have never had good cheese..it just takes a whole day to get it and I CANNOT wait to make this tomorrow for our lunch. My crust is gently resting in the frig... sleeping the night away and will be so happy and cheerful to be united with such wonderful goodies. I can hear it sighing with delight now.
You live in such a beautiful city..I live in such beautiful country..we do pay the price, don't we?
I would send you some home grown eggs, grass fed beef and glorious sunflowers..hundreds.
I will be quiet now and give you thanks for such wonders that you create and wish you the best. I will be back, but I promise to be very quiet and less verbose.

The restaurant I opened was Italian, and I remember running out of foods like angel hair pasta, which made my tables less than happy with their dinners. There were nights when we seemed to run out of half the menu.
