Greek love in a roll.
I wrote two weeks ago of my childhoods trip to Greece with my parents.
I tasted lamb shanks for the first time, but there was also something else I tasted for the first time.
Feta cheese.
It was love at first bite. loved the strong taste and yet so creamy.
When we came home I made my mother buy huge pieces of feta and we feasted on the cheese for a long time.
I know that a greek salad is not a huge wow, but i do find it so tasty and simple.
And even better rolled up in lavash bread.
Greek feta rolls
serves 4
3 ripe plum tomatoes, diced, discard the seeds
1/2 cucumber, diced
1/2 red onion, diced
1 cup feta cheese of good quality( no low fat, please!)
1 tablespoon finely chopped dill
3 tablespoons olive oil
1 tablespoon red wine vinegar
salt
pepper
4 lavash breads
Mix together tomatoes, cucumber, onion, feta, dill, oil and vinegar.
Taste with salt and pepper.
Place the salad in the middle of the lavash bread, roll up and enjoy.

I love greek salad too, Paul. I must have black olives in mine, though, and sometimes chickpeas (garbanzo beans), which can turn it into a main course when I'm feeling the need for a healthy dinner! Love your site, and hope things are fine in your world.

I can't wait to try this. I love the ingredients. I've never heard of lavash bread before. I'm going to look for it.
