When I was a kid my grandmother made a strawberry and coconut cake.
It was so good.
The recipe is gone, but I have tried to make my own version of this cake.
Its really good.And the mix of strawberry and coconut has always been a favorite of mine.

Coconut and strawberry cake
Makes two small cakes
Serves 8
100 g butter, melted
1/3 cup sugar
1 cup plain flour
1/2 teaspoon baking powder
1/2 cup full fat coconut milk
1/4 cup milk
Topping:
1/2 cup strawberry jam
1 egg white
2 tablespoons sugar
1 cup flaked coconut
Preheat oven to 180C, 350F.
Mix together butter, sugar, flour, baking powder, coconut milk and milk in a baking bowl.
Divide the mixture between two greased small loaf pans.
Bake for about 20 minutes, or until set and golden.
Cool.
Spread jam over the cakes.
Mix together egg white, sugar and coconut.
Top the cakes with the mixture and bake further for about 5-6 minutes, or until the coconut gets golden.
Cool and remove from the tin before serving
